Homemade Vanilla Extract

I started making my vanilla extract purely due to sky rocketing costs of vanilla beans. I prepared my first extract and discovered that Homemade Vanilla Extract is way more delicious than anything available in supermarkets.
You will be surprised how easy it is to make!
Yield: 500ml vanilla extract
Time: 10 minutes prep + at least 3 months maturation
Tin: 1L jar or bottle
- 12 vanilla beans
- 500ml Vodka or Rum
1. Split vanilla beans in half leaving about 1cm intact at each end. Put the vanilla beans in a glass jar and cover with vodka/rum. Close the jar tightly and store in dry, cool place, away from the light for 12 weeks. The longer you age it the richer and fuller flavour your vanilla extract will have. Give the jar/bottle a shake once every week.
